  • 2 medium zucchini, sliced 1/4 inch thick
  • 3/4 tsp sea salt
  • 3 Tbsp all-purpose flour
  • 1 egg, beaten
  • 2 Tbsp oil

Savor the crispy goodness of golden-brown zucchini with this easy recipe adapted from a popular Korean dish, Hobak Jeon (Pan-fried Zucchini Fritters). This dish is commonly served in the summer or on popular Korean holidays when squash season is in peak.

Pan-fried to perfection, these zucchini slices make a versatile dish, perfect for a light lunch or as a side dish. Pair it with a simple dipping sauce of soy sauce, rice vinegar, sugar and a hint of spice for an added kick.

How to Make How to Make Easy Pan-Fried Zucchini

1. Place sliced zucchini onto a plate and sprinkle evenly with 1/4 tsp salt. Let the zucchini sweat for about 5 minutes, then pat dry with a paper towel.
2. Add flour and remaining 1/2 tsp salt into a Ziploc bag. Add the zucchini and shake the bag until slices are evenly coated.
3. Dip each slice of zucchini into the bowl with the beaten egg, coating both sides fully.
4. Heat oil in a large pan over medium to medium-low heat. Place the zucchini into the pan and cook each side until golden brown, about 4-5 minutes.
5. Enjoy with rice or noodles and sauce of your choice.

Tip
• Easy dipping sauce: Soy sauce, rice vinegar, sugar, water (to dilute, if needed) and chili pepper sauce (optional).
• Yellow squash can be used instead of zucchini.
