Ingredients
- 1 spaghetti squash
- 1 tbsp olive oil
- 3 tbsp parmesan cheese
- 1/4 tsp dried oregano
- 2 tsp dried basil
- 1 cup chopped tomatoes
- Salt and black pepper to taste
Spaghetti squash with tomato and basil is the low-carb comfort food you’ve been looking for. Surprisingly easy to prepare, spaghetti squash is a great alternative to pasta!
How to Make Microwavable Spaghetti Squash Pasta
- 1. Use a fork or knife to carefully poke multiple holes around the squash. Then microwave the whole squash to soften it, around 5-10 minutes depending on size.
- 2. Remove squash from microwave and cut in half lengthwise. Use a spoon to remove the seeds and pulp. Place back into the microwave and heat until tender, about 5-10 minutes. Set aside to cool.
- 3. In a large bowl, mix the olive oil, parmesan cheese, oregano, basil and diced tomatoes.
- 4. When cooled enough to handle, scrape the insides of the squash with a fork to create “noodles.
- 5. Add “noodles” to the tomato mixture and toss until combined. Season with Servings: 4-6 salt and pepper. Enjoy!
