  • 1/2 tsp salt or soy sauce
  • 1/2 tsp ground pepper

How to Make Comforting Tomato Egg Stir Fry

  • 1. In a bowl, whisk together eggs, salt or soy sauce and pepper.
  • 2. Heat oil in a saucepan over medium-high heat, add the egg and cook, stirring lightly until they set and are slightly runny. Pour eggs back into the bowl and set aside.
  • 3. Reoil the pan, then add tomatoes, water and sugar, and cook until tomatoes soften, about 1-2 minutes.
  • 4. Pour eggs back to the pan and stir to combine with the tomatoes. Garnish with green onions and enjoy over a bowl of rice!
