How to Make Creamy Zucchini Pasta

    1. Bring a pot of water to a boil and cook pasta according to package directions. Reserve 1½–2 cups of pasta water, then drain and set aside.
    2. Heat olive oil in a large pot over medium heat. Add garlic and sauté until fragrant, then add zucchini and cook until tender. Season with salt and pepper to taste.
    3. Transfer about half of the sautéed zucchini into a blender with some of the reserved pasta water and blend until smooth. (If using a hand blender, place half of the zucchini to a bowl and blend the remaining mixture directly in the pot.)
    4. In the same pot, combine the blended zucchini sauce with the remaining sautéed zucchini, red pepper flakes, butter, and cooked pasta. Toss to coat evenly, adding reserved pasta water as needed to reach your desired consistency.
    5. Garnish with parmesan cheese and fresh parsley. Serve warm and enjoy!
