  • 1 can black beans
  • 1 can yellow corn
  • 1 can diced tomatoes
  • 1 can green chiles
  • 1/2 bunch green onions, chopped
  • 1/2 bunch cilantro, chopped
  • 2 garlic cloves, chopped
  • 2 tbsp of lemon juice
  • Salt and pepper to taste
  • 1/2 cup of cooking oil

Mixing fresh ingredients with canned corn and beans gives this recipe tons of flavor and color. You’ll love how easy and flavorful this dish is. It’s a Second Harvest favorite!

How to Make Quick Bean Salad

  1. Drain and rinse the black beans and corn.
  2. Combine all ingredients in a large bowl. Mix well. Can be served with whole wheat chips, crackers, tortillas or as a side dish.
