- 2 cups napa cabbage
- 2 cups lettuce
- 1 bell pepper
- 1/4 cup green onion
- 1/4 cup mint
- 1/4 cup cilantro
- 2 oz rice noodles
- 1 tsp sesame oil
- 1/4 tsp salt
- 24 pieces of shrimp (cooked, thawed) - for vegetarian option use tofu
- 8 sheets rice paper
Peanut Sauce
- ⅓ cup creamy peanut butter
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp sesame oil
- 2 cloves garlic, pressed or minced
- 2-3 tbsp water, as needed
