Ingredients

Spring Rolls

  • 1 cucumber
  • 2 carrots
  • 2 cups napa cabbage
  • 2 cups lettuce
  • 1 bell pepper
  • 1/4 cup green onion
  • 1/4 cup mint
  • 1/4 cup cilantro
  • 2 oz rice noodles
  • 1 tsp sesame oil
  • 1/4 tsp salt
  • 24 pieces of shrimp (cooked, thawed) - for vegetarian option use tofu
  • 8 sheets rice paper

Peanut Sauce

  • ⅓ cup creamy peanut butter
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 2 cloves garlic, pressed or minced
  • 2-3 tbsp water, as needed

These Vietnamese-inspired fresh spring rolls are packed with colorful vegetables, fresh herbs, shrimp, and noodles that have been lightly tossed in sesame oil. They pack a punch of flavor and crunch – and are fun to make too! We love dipping them in this easy-to-make rich and creamy peanut sauce. Enjoy!
