Ingredients

Salad

  • 5 oz fresh baby spinach
  • 2 small apples, cored, quartered, and sliced (or chop or dice as desired)
  • 1/2 cup pecans, chopped
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup dried cranberries (optional)

Vinaigrette Dressing

  • 1/4 cup olive oil
  • 2 Tbsp apple cider vinegar
  • Juice of 1/2 lemon
  • Salt and pepper to taste

This refreshing blend of baby spinach, crisp apples, crunchy pecans, and savory Parmesan cheese makes this salad nutritious as it is delicious. How to Make Crisp Apple & Pecan Spinach Salad

  1. 1. In a small bowl, combine olive oil, apple cider vinegar, and lemon juice. Season with salt and pepper. Whisk vigorously until thoroughly mixed. Set aside.
  2. 2. In a large bowl, gently combine baby spinach, sliced apples, and chopped pecans. Sprinkle half of the shredded cheese over the salad.
  3. 3. Drizzle the dressing over the salad and toss gently to coat all the ingredients. Serve immediately, garnish with the remaining Parmesan cheese. Sprinkle the cranberries on top for a hint of sweetness. Enjoy!
