Crepes salate ispirate a Jian Bing

  • 1 cucchiaio di olio da cucina
  • 1 medium flour tortilla
  • 1 uovo
  • 1 cucchiaio di salsa di soia
  • 1 stalk scallion, chopped
  • 1/4 mazzetto di coriandolo fresco, tritato
  • 1 Tbsp sriracha or hot sauce (optional)
  • 1 Tbsp ketchup (optional)
  • 1 cucchiaio di salsa di soia
  • 1 spicchio d'aglio tritato
  • Leftover scallions and cilantro

This savory recipe was inspired by a popular Chinese street food, Jian Bing – named as “one of China’s most popular street breakfasts.” Simple ingredients such as a flour crepe, egg and sauce of your choice come together perfectly, and there are plenty of variations depending on taste and preference in different regions. We’ve used a flour tortilla as the crepe – but can promise you it’s not skimping on the flavor. We also recommend eating right away to not lose its crispiness. Enjoy!

How to Make Savory Jian Bing Inspired Crepes

  1. 1. In a nonstick skillet over medium-low heat, add cooking oil and place the tortilla into it. Crack egg and scramble on top of the tortilla. Cook until egg begins to set, then slowly flip the tortilla over.
  2. 2. Add soy sauce, scallions, cilantro, and sauce of choice to the tortilla.
  3. 3. Once the sauce and vegetables are added, fold the tortilla in half, and fold again into a quarter.

 

Dipping Sauce

  1. 1. Into a bowl, add soy sauce, garlic, leftover chopped scallions and cilantro, and mix well. Enjoy dipping crepes into the sauce.
