  • 3 cups water or chicken stock
  • 1 cup elbow macaroni pasta or small pasta of choice

  1. Heat oil in a large pot. Add onion and cook for 4-5 minutes until soft. Stir in garlic, rosemary, and red pepper flakes, and cook for 1 more minute.
  2. Add tomatoes, chickpeas, and 3 cups of water. Bring to a boil, then add pasta. Simmer for 10 minutes, stirring often. If you want more broth, add 1/2 to 1 cup of water or chicken stock, and simmer until heated. Season with salt and pepper, to taste.
  3. Add kale to the pot and stir until wilted. Taste and adjust seasoning as needed.
  4. Serve in bowls, topped with grated parmesan cheese.
