Ingredients

  • 2 cups water, add more if needed
  • 2 bay leaves
  • 1 medium white onion, cut in half
  • 3 boneless, skinless chicken breasts
  • 2 Tbsp cooking oil
  • 3 tomatoes
  • 2 garlic cloves
  • 1 7-oz can of chipotles pepper in adobo sauce
  • 1/2 chicken bouillon cube
  • Salt and pepper to taste
  • 8 yellow tostadas

Garnishes

  • 1/2 cup of shredded iceberg lettuce
  • 1 avocado, sliced
  • 1/2 cup of Mexican cream
  • 1/4 cup of fresco cheese

Originating from Puebla, Mexico, tinga features shredded chicken in a smoky chipotle sauce, giving it a rich, bold flavor. Traditionally served in various forms, this version uses crispy tostadas as the perfect base to showcase tender, spiced chicken topped with fresh avocado, lettuce, and creamy Mexican crema. A deliciously simple way to enjoy a taste of Mexico’s culinary heritage!

How to Make How to Make Chipotle Chicken Tinga Tostadas

1. In a saucepan, combine water, bay leaves, half an onion and 1 tsp salt. Bring to a boil, add chicken breasts, and ensure they are fully submerged (add more water if needed). Cook for 12-15 minutes, until the chicken is fully cooked. Meanwhile, thinly slice the remaining half onion and set aside.
2. Remove the cooked chicken and let cool, then use two forks or your hands to shred the chicken and set aside.
3. Add tomatoes to the saucepan and simmer for 10 minutes.
4. Prepare the Sauce: Into a blender, add 1/2 cup broth, the cooked tomatoes, and the onion half from the saucepan. Then add garlic, chipotle peppers, black pepper and chicken bouillon, and blend until smooth.
5. Heat oil in a large skillet over medium heat. Add the sliced onions and sauté for 2 minutes. Pour in the blended sauce and cook until heated through, about 5 minutes. Add the shredded chicken, stir to combine, and cook for 2 more minutes.
6. Assemble the Tostadas:
• Spread crema Mexicana on a tostada.
• Top with the chicken mixture, lettuce, avocado,
and queso fresco.
• Serve immediately.

 

Tips
• For a spicier sauce, add more chipotle peppers
or adjust the amount of black pepper.
• Customize toppings to your preference.
