Ingredients

One-Pot Cheesy Pumpkin Pasta

  • 1 Tbsp cooking oil
  • 3 garlic cloves, minced
  • 12 oz pasta of your choice
  • 1 15-oz can pumpkin puree
  • 4 cups vegetable or chicken broth
  • 1 1/2 tsp onion powder
  • 1/2-1 tsp salt, to taste
  • 1/4 tsp black pepper
  • 1/2 tsp nutmeg
  • 4 oz cream cheese, cut into cubes
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/4 tsp red pepper flakes
  • Chopped parsley, optional

Here is one savory pumpkin dish that will surprise you at how good it tastes. Pumpkin puree makes this pasta dish creamy, vibrant in color, and nutrient dense containing Vitamin A, iron, and fiber. This recipe tastes great with whole wheat pasta too.

How to Make One-Pot Cheesy Pumpkin Pasta

Directions:
1. Into a pot over medium-high heat, add cooking oil and sauté garlic until fragrant.
2. Add pasta, pumpkin puree, broth, onion powder, salt, black pepper and nutmeg to the pot and stir to combine.
3. Cover the pot and bring to a boil, then reduce heat and simmer for 10-15 minutes, until pasta is cooked to desired firmness. Stir occasionally to prevent sticking.
4. Over low heat, add cream cheese, shredded cheese and red pepper flakes. Gently stir to melt the cheeses until sauce is smooth.
5. Taste and adjust seasonings as needed. Top pasta with parsley and extra cheese if desired. Enjoy!

Tip:
. If using long pastas, such as spaghetti, break noodles in half so that they are submerged in broth while cooking.
