Preparation Steps

1. In a large saucepan, combine lentils with 4 cups of water
2. Bring to a boil, then reduce heat to medium-low and simmer, uncovered, for 10-20 minutes, or until lentils are tender but not mushy. Skim off any foam that rises to the surface.
3. Add the remaining 4 cups of water, garlic, noodles, cumin, garlic powder, salt, and pepper to the pot.
4. Bring to a boil again, then reduce heat to medium-low and simmer, uncovered, for 10-12 minutes, or until noodles are cooked al dente
5. Squeeze fresh lemon juice over the soup and serve hot

 

Optional: For added flavor, sauté the diced onion in olive oil until softened before adding it to the pot with the lentils and water.
Tip: Customize the flavor with your favorite herbs like cilantro or parsley.
