Ingredients

  • 1 head cabbage (green or purple), thinly sliced
  • 2 green onions, thinly sliced
  • 1/2 bunch cilantro, chopped
  • 1 cup unsalted peanuts
  • 2 Tbsp sesame seeds
  • 1 packet of dry instant ramen noodles (no seasoning), crushed
  • 2 tsp of red chili flakes
  • Salt and black pepper to taste
  • 2 12-oz can of chicken breast, drained and chopped

Dressing

  • 1/4 cup olive oil
  • 1/4 cup rice vinegar
  • 3 Tbsp sesame oil
  • 1 1/2 Tbsp honey or maple syrup
  • 1 1/2 tsp low sodium soy sauce
  • 2 garlic cloves, grated

This Crunchy Chicken Salad is a modern twist on classic Asian-inspired salads, blending fresh veggies, savory chicken, and a tangy dressing for a refreshing, flavorful meal. With ramen noodles, peanuts, and sesame seeds adding crunch, it’s a satisfying mix of savory, sweet, and spicy. Ready in just 25 minutes, this easy salad is perfect for lunch or dinner and is sure to become a favorite!

How to Make Crunchy Chicken Salad

1. Into a large bowl, add cabbage, green onions, cilantro, peanuts, sesame seeds, dry noodles, and red chili flakes. Mix to combine salad and set aside.
2. In another bowl, whisk together olive oil, rice vinegar, sesame oil, honey, soy sauce and garlic. Add chicken to the dressing and let it marinate for at least 5 minutes.
3. Add chicken and dressing to the salad mix bowl and toss to combine. Serve chilled or enjoy immediately.

 

Tip: Rotisserie or fresh cooked chicken can also be used.
